Menu Plan Monday - Week of 11/18/12



This is my favorite week of the year to cook - and eat.    I love cooking Thanksgiving dinner and then having turkey sandwiches the next day.

But, there is a problem this year.  What am I going to do without Wonder White?

On  the day after Thanksgiving -  my turkey sandwich has to be on Wonder White.  Any other day of the year, a turkey sandwich is o.k. with me on another type of bread.  In fact, I never buy Wonder bread any other time of year.

There has been so much press on the end of Twinkies and Ho Ho's,  but on Friday,  I'll be morning the end of Wonder Bread.


Monday:  Beef Enchiladas, Green Salad

Tuesday:  Spicy Garlic Chicken, Steamed Rice, Peas, Fresh Pineapple

Wednesday: Steak & Black Bean Chili, Corn Bread, Applesauce

Thursday: Turkey,  Mashed Potatoes & Gravy, Stuffing, Green Beans, Cranberry Sauce

Friday: Leftovers

Saturday: Grilled Pork Chops, Baked Potatoes, Green Veggie, Fresh Pineapple

Sunday: Clean out the fridge night or breakfast as dinner if all the leftovers are gone.

Menu Plan Monday - Week of 11/12/12



I plan my meals with what I already have in the pantry and freeze, and then fill in with what is on sale at the grocery stores.  Not only does it make meal planning easy, but it also helps me save a ton of money.

Monday:  Amish Baked Chicken, Mashed Potatoes, Green Veggie

Tuesday:  Taco Soup, Tortilla Chips

Wednesday: Breakfast as dinner

Thursday: Leftover Taco Soup

Friday: Sloppy Joes, Baked Sweet Potato Fries

Saturday: Pork Steak, Baked Beans

Sunday: Meatloaf, Mashed Potatoes, Corn (this meal didn't get fixed last week)

Friday: Biscuits & Sausage Gravy, Orange Juice

Saturday: Pork Burgers, Fries, Fresh Pineapple

Sunday: Meatloaf, Mashed Potatoes, Corn

Menu Plan Monday - 10/08/12


Some weeks I have no problem coming up with ideas for dinner, other weeks it's a struggle.  This week was a struggle -  I don't know why, the freezer and pantry are full.

Monday: Tacos

Tuesday: Spaghetti with Meat Sauce, Green Salad

Wednesday: Orange Chicken, Rice, Steamed Broccoli, Pineapple

Thursday: Leftovers

Friday: Bean, Beef & Pepper Jack Flautas (didn't get to make this dish last week)

Saturday: Sloppy Joes, Fries, Apple Slices

Sunday:   Senate Bean Soup, Corn Bread

Menu Plan Monday - Week of 9/24/12



It's another busy week for my family, but when don't we have a busy week.  I try to keep dinner prep quick and easy during the week - especially late in the work week.  My goal is to use what I have in the pantry, get something on the table for dinner, and not resort to delivery or carry out.

Monday: Taco Soup, Tortilla Chips, Slice Apples

Tuesday: Chicken Marsala w/ Linguine (Macaroni Grill Dinner Kit), Peas, Garlic Bread, Pineapple

Wednesday: Leftovers

Thursday: Grilled Bratwurst, Grilled Onions, Fries, Homemade Applesauce

Friday: Breakfast Burritos, Orange Juice

Saturday: Out to dinner with friends

Sunday: Meatloaf, Mashed Potatoes, Corn, Homemade Applesauce

Menu Plan Monday - Week of 9/17/12



This has to be the easiest week for meal planning ever.  We are going to be extremely busy this week:  a PTO meeting, a blogger event sponsored by Missouri Farmers Care at Busch Stadium,  and a college visit in Oklahoma for my high school senior, so fewer nights to plan for.

Add on two meals that didn't get fixed last week, and Cauliflower on sale again at Aldi (I always fix Spicy Sausage & Cauliflower soup when it is on sale) and I'm done planning.

Monday: Spicy Sausage & Cauliflower Soup

Tuesday: Leftovers

Wednesday: Dinner at the Busch Stadium

Thursday: Road trip

Friday: Road trip

Saturday: Pork Tenderloin, Long Grain & Wild Rice, Homemade Applesauce

Sunday: Baked Mostaccioli, Green Salad, Garlic Bread

Menu Plan Monday - Week of 9/10/12


There is a lot more beef on my menu lately - we split a side of beef with a friend.  Besides the price being a lot better than the grocery store (less than $2.50 lb), it taste so much better.

Monday: Crock Pot Mongolian Beef,  Broccoli, Pineapplee
This is a new recipe for me. I love Mongolian Beef, and the ease of using a Crock Pot.  Hopefully, this recipe will at least come close to tasting like what you get in a Chinese restaurant.

Tuesday: Pulled Pork BBQ Sandwiches,  Baked Beans,  Homemade Applesauce

Wednesday: BBQ Stuffed Baked Potatoes, Green Salad, Pears
The last time we visited my parents, we went to a Famous Dave's for lunch and I had a BBQ Stuffed Potato.  It was fantastic.  I'm going to try and recreate it with my leftover pulled pork

Thursday: Spicy Sausage & Cauliflower Soup
When cauliflower goes on sale at Aldi, we have Spicy Sausage & Cauliflower Soup.  Even people who don't like cauliflower will eat it in this soup.

Friday:  Pork Tenderloin, Grilled Cauliflower, Long Grain & Wild Rice

Saturday: Baked Mostaccioli, Green Salad, Garlic Bread

Sunday: Pioneer Woman's Pot Roast, Mashed Potatoes, Homemade Applesauce
Back on the menu from last week.  Something always changes in our family, and a meal I had planned doesn't get fixed.

Menu Plan Monday - Week of 9/3/12


I did a horrible job of menu planning this summer.  It not only made life harder, but it cost more money also.  Most of the summer was to hot to think about cooking - let alone eating.  So, we had salads, sandwiches and anything that was quick and easy.

With school back in full swing, (yes - I'm three weeks behind) I need to get dinner on the table at a reasonable time, and we need a more structured evening routine - if that is possible with a teenager.

Monday: Grilled Pork Steaks, Baked Beans, Corn on the Cob, Homemade Applesauce

Tuesday:  Pasta Con Broccoli, Green Salad, Garlic Bread

Wednesday: School Picnic

Thursday: Breakfast Burritos, Orange Juice

Friday:  Pizza, Green Salad,

Saturday: Grilled Hamburgers, Potato Salad, Apple Slices

Sunday: Pioneer Woman's Pot Roast, Mashed Potatoes, Homemade Applesauce

Menu Plan Monday - Week of 6/4/12



I plan my menu each week with what I already have in the pantry, freezer and fridge.  That leaves me to spend my grocery budget on what is the best price for the week.

Monday: Layered Salad

Tuesday: Grilled Bratwurst with Grilled Onions,  Fresh Pineapple, Green Salad

Wednesday: Slow Cooker Chicken Tacos, Refried Beans

Thursday: Lunchmeat Sandwiches, Cole Slaw, Fresh Fruit

We are going to try to get to the  Shakespeare Festival again. Last week was way too cold and wet.

Friday: Spicy Dijon Grilled Chicken Wraps

Saturday: Date Night

Sunday: Grilled Hamburgers, Grilled Corn, Fresh Fruit

Menu Plan Monday - Week of 5/28/12


I plan my menu each week with what I already have in the pantry, freezer and fridge.  That leaves me to spend my grocery budget on what is the best price for the week.

Monday: Grilled Pork Steaks, Corn on the Cob, Fresh Pineapple

It can't be a summer holiday in St Louis without grilling pork steaks.

Tuesday: BBQ Chicken, Potato Salad, Green Salad

Wednesday: Slow Cooker Sloppy Joes, Chips, Green Salad

Thursday: Lunchmeat Sandwiches, Cole Slaw, Cookies

We are planning to attend the Shakespeare Festival. I love that you can take your own food

Friday: Juicy Lucys, Leftover Potato Salad or Cole Slaw

My oldest attends college in Minnesota and Juicy Lucys are to Minneapolis what Toasted Ravioli is to St Louis. He's heading to DC for the summer, so I'm sure he will enjoy them one last time before he goes.

Saturday: Graduation party to attend

Sunday: Chicken Fajitas

Menu Plan Monday - Week of 5/21/12


"Mad Madness" (that busy busy schedule that stars about mid-March) is all but over at our house.  I've focused  each week to get dinner on the table and not resort to the drive-thru window.  Most weeks, I've been successful coming up with a menu plan that will work.

Now, I can't seen to get out of the hurry feed the family mode.

Monday: Grilled Bratwurst & Onions, Sweet Potato Fries, Strawberries

This is going to be a wild week at our house.  My son has four baseball games, a band concert and the sports banquet to attend.  We only have one child still at home. I don't know who we did "May Madness" with two.

Monday: BBQ Beef Sandwiches,  green salad, chips

Tuesday:  Leftover BBQ Beef Sandwiches

Wednesday:  Sports Banquet
I remember in years past, each class being assigned something to bring. I hope I remember to ask my son what that is before we are in the car on Wednesday.

Friday:  Ravioli (frozen from Aldi), Green Salad

Menu Plan Monday - Week of 4/30/12


My son's baseball team's picnic is suppose to be tonight. I'm not sure there will be any baseball this week after the rain we got this past weekend and the forecast.

I signed up to take the condiments ( love having them all in my stockpile) and fresh pineapple ($0.99 from Aldi last week.)  I hope the pineapple keeps until they can get a game in.

Monday: Baseball Picnic

Tuesday:  Leftover Baked Mostaccioli, Green Salad, Garlic Bread

Wednesday:  Spicy Garlic Chicken (Wanchai Ferry Dinner Kit), Steamed Rice, Broccoli

Menu Plan Monday - Week of 4/23/12


Even though I need to get dinner on the table quickly after my son's baseballs games, I still plan my menu from what I already have in the pantry and freezer. 

It hasn't been easy coming up with ideas of what meals I can get on the table quickly, but using my stockpile has been easier than roaming the grocery aisle trying to come up with dinner ideas. 

Monday: Ham & Cheese Sandwiches, Chips, Strawberries

Tuesday:  Spaghetti (Ragu), Garlic Bread

Wednesday:  Breakfast Casserole, Orange Juice

Thursday: Frozen Pizza, Pineapple

Friday: Leftover Breakfast Casserole

Saturday:  General Tso's Chicken (Kahiki), Steamed Rice, Broccoli, Pineapple

Sunday: Baked Mostaccioli, Green Salad, Garlic Bread

Menu Plan Monday - Week of 4/16/12




Monday: Senate Bean Soup, Green Salad, fresh fruit
  • I made the soup last night after dinner.  I'm going to put it in the Crockpot when  I leave for the youngest baseball game, so it will be warm when we get home.
Tuesday:  Leftover Bean Soup
  • Same routine as last night. Thank goodness my family doesn't complain about leftovers. 
Wednesday:  Grilled Chicken Breast, Grilled Cauliflower

Thursday: Honey Mustard Chicken Wraps,  Chips
  • My plan is to grill extra chicken on Wednesday night, cut up the lettuce and shred the cheese in the afternoon.  Dinner should be on the table within five minutes of getting home from baseball.
Friday: Pasta Con Broccoli, Garlic Bread
  • Broccoli & mushrooms are on sale at Aldi this week. 
Saturday:  Grilled Hamburgers, Sweet Potato Fries

Sunday:  Breakfast Casserole, Orange Juice

Menu Plan Monday - Week of 4/09/12


Quick and easy has been the theme of my menu planning since my son's baseball season started.  Soup, sandwiches or something in the crockpot is the only things that seems to work when we get home after 7 pm and I still have to get dinner on the table.

Monday: Ham & Cheese Sandwiches, Potato Salad, Fresh Fruit

Tuesday:  Taco Soup

Wednesday:  Ham, Baked Potatoes, Frozen Veggie, Fresh Fruit

Thursday: Leftover Taco Soup

Another week I don't have to plan for seven meals.  This week, we are taking our youngest to visit a few colleges.    My husband and I are counting (17 months) until we are empty nesters!

Menu Plan Monday - Week of 3/05/12



Monday: Corn & Cheese Chowder, Green Salad
  • Yes, this soup is on my menu for the third week in a row. My family LOVES this soup and I have a peppers in the fridge that need to be used.
Tuesday: Chicken Tetrazzini, Green Salad, Garlic Bread
  • I usually make this dish after the holidays with leftover turkey.  We really like this dish, so why not make it with chicken like the recipe calls for.
Wednesday:  Tilapia,  Long Grain & Wild Rice, Frozen Veggie
  • I'm going to try the Kraft Fresh Take I bought at Schnucks last week.  I hope we like it on fish. 
Thursday: Leftover Chicken Tettrazzi
  • Thursday night is going to be a very busy evening for us, so everyone can heat up their own plate of Tetrazzini when they get a chance.   I like to eat meals as a family, but some nights it's just not possible.
Friday:  Biscuits & Sausage Gravy, Orange Juice
  • This is NOT my favorite thing to eat, but my son and husband love Biscuits & Gravy.  The only thing good about it is that it's quick and easy to put together - a perfect meal for Friday of a busy week.
Saturday:  Hamburgers, Fries, Fresh Fruit
  • Hopefully, it will be nice weather to grill.
Sunday: Chicken Parmigiana, Green Salad, Garlic Bread
  • It's wouldn't be an official menu plan without trying what Pioneer Woman made on her TV show the previous week.  We weren't too crazy about last week's BBQ Meatballs, but that is the first dish of hers that we haven't been absolutely loved.
